Jumbo Shrimp With Fresh Vegetables

Ingredients
3 tablespoons peanut oil
4 tablespoons chopped scallions
1/2 teaspoon chopped ginger
1 teaspoon salt
2 cloves garlic, minced
1 chopped shallot
2 egg whites
1 oz. rice wine or sherry
1 tablespoons soy sauce
3 tablespoons corn starch
1 lb. jumbo shrimp, cleaned and deveined)
10 -12 oz. shiitake mushrooms
1/2 cup of frozen peas
Cooking
Methods
Mix two egg whites with wine, salt and corn starch in a bowl. Add shrimp to the
mixture. In a large skillet, heat oil over high heat and add shrimp mixture, garlic,
ginger and shallot. Stir-fry for about one minute. Add vegetables and soy sauce and stir
fry for additional two minutes. Garnish with chopped scallions.
